We are coming from Holland by car.  Where can you park your car for 7 or 8 days?

That's a tricky one, because wherever you leave it will be "at your own risk" so if it's your own car, be sure your insurance will cover any damage.  (Rental cars in Ireland seem quite expensive and check the small print for the excess per claim.)  Parking in Dingle should be a whole lot safer than, for example, parking in any big city, but any unattended car could be a potential target for petty vandalism if left in an unsuitable place.

In practice, you could reduce the risk dramatically by asking an accommodation provider (perhaps one with whom you are staying at beginning and end of trip) whether you can park there for the duration.  I'd try emailing a few in Tralee or Camp and see what response you get.

Can anybody else advise?
